They come in colors ranging from orange, yellow, and green to a grayish blue, white, or even patterned and are available in all kinds of different shapes and sizes: pumpkins and squashes are varied, decorative, and suitable for longer-term storage. The many different edible varieties of pumpkins and squashes can be used to prepare a multitude of dishes. Nevertheless, their toughness, and sometimes also their immense size, means that robust machines with sharp blades are required for their processing. KRONEN offers solutions for peeling, segmenting and slicing pumpkins and squashes.

The S 128 segment cutting machine is designed especially for pumpkin processing and can slice large pumpkins and squashes into segments of similar sizes. It can be quickly and easily adapted to different product sizes by individually setting the number of segments sliced based on the size of the pumpkin or squash being processed. As a result, the machine is able to produce between 4 and 16 segments or cuts with clean cutting edges. The individual selection of the number of segments produced from each pumpkin or squash enables users to efficiently cut pumpkins and squashes of varied sizes into segments that are as uniform as possible. The quick and easy operation of the machine enables it to process up to 75 pumpkins/squashes an hour when slicing them into 16 segments. The segments can then be deseeded and packaged to be sold in portions.

Deseeded segments can be cut into cubes or strips with the GS 10-2 or GS 20 belt cutting machines. The GS 10-2, for example, can cut up to 1,300 kg of pumpkin/squash per hour. Its hold-down technology enables it to achieve a smooth cutting result.

When it comes to bottle gourd, namely bottle-shaped squashes like butternut squash, the AMS 220 is the ideal peeling solution. The AMS 220 can peel pumpkins and squashes with diameters ranging from 100 to 220 mm. Its simple operation enables users to process up to 240 pumpkins/squashes per hour.

Cabbage is cultivated in many countries all over the world and is a healthy ingredient in all kinds of different cuisines – be it raw, pickled or boiled. Here in Germany, it is best known in its fermented form: as the famous “sauerkraut”. Given its suitability for long-term storage and its long shelf life, pickled or fermented cabbage has been one of the world’s most important vegetables for centuries. In fact, tons upon tons of its leafy heads are still cultivated and processed in many countries all over the globe in the present day. The most frequently grown varieties of cabbage include white cabbage, red cabbage and savoy cabbage, which are consumed stewed, shredded, steamed, pickled, fermented, boiled, sautéed or raw. A variety of KRONEN machines are suitable for processing cabbage, and we have also developed machines designed specifically for the task.

The size of cabbage heads can vary a great deal, with weights ranging from hundreds of grams to several kilograms both due to the variety and depending on the cultivation conditions. When it comes to machines for processing cabbage, it is therefore particularly important that they can be adjusted to process different sizes. KRONEN offers a variety of machines for coring and cutting cabbage with tool-changing options that enable them to be easily and flexibly adapted for different types of raw produce.

Machines for coring small amounts of cabbage include the HGW manual grid cutter as a manually operated processing solution with a capacity of up to 300 cabbage heads per hour or the PGW pneumatical grid cutter, which can process up to 400 cabbage heads per hour. The KSB-2 cabbage corer is specially designed for coring cabbage heads and can process large quantities of up to 600 heads of cabbage per hour. Different drill heads and a drill head reduction enable the KSB-2 to be adapted for cabbage of different sizes.

In the next stage of processing, cutting the cabbage, the precise cutting thickness plays a central role. Ideal solutions for this stage are the KSM 100 vegetable cutter with a capacity of up to 300 kg per hour and two well-established belt cutting machines: the GS 10-2 for processing up to 700 kg and the GS 20for larger quantities of up to 2,250 kg per hour. We also offer a solution specifically designed for cutting cabbage: the CAP 68 cabbage cutting machine with a processing capacity of up to 2,500 kg per hour. In this machine, shred shorteners can additionally be used to reduce the length of the strips of cabbage to approx. 50, 70 or 100 mm based on the customer’s specifications.

For a ready-to-eat product, the cut cabbage then needs to be washed, for example in the GEWA 2600 V PLUSfor smaller product quantities or the GEWA 5000 V PLUS with a larger capacity. The cut cabbage is often also mixed with other products such as carrot strips or onions, for example in the K120 or K230 salad and delicatessen mixing machines.

All of the processing steps required for cabbage can be performed efficiently and as a continuous process in processing lines with different capacities adapted to meet customers’ specific requirements.

The delicate leaves of lamb’s lettuce can be found in a multitude of ready-to-eat mixed salads. Given its hardiness and frost resistance, lamb’s lettuce can be grown all year round, especially during the colder winter months. Pre-washed lamb’s lettuce in particular is a popular ingredient both in restaurants and hotels and in private households. This is because its small leaves are very good at holding on tight to soil, sand, and dirt and therefore place special demands on the washing process.

With KRONEN washing machines, these sensitive salad leaves can be processed efficiently and gently. The newly developed GEWA AF pre-washing machine and the further developed GEWA XL washing machine are particularly ideal for processing larger amounts and can be combined in production lines for optimal washing results.

The GEWA AF uses the new and unique “Active Flume” washing system, which is specifically designed to wash floating leafy produce such as lamb’s lettuce. The effective and gentle infeed slide enables the light and delicate salad leaves to be submerged without mechanical stress. The pre-washing machine processes up to 2,500 kg of lamb’s lettuce per hour and has a capacity of up to 3,000 kg per hour when washing iceberg lettuce. The GEWA AF is therefore ideal for successfully handling production peaks. With a water-product ratio of just four liters of water for one liter of product, the machine is also an excellent water-saving solution. This 4-to-1 ratio is perfect for pre-washing and enables the machine to remove cell sap, sand, and soil.

For an optimal washing result when processing delicate, multi-branched produce such as lamb’s lettuce, in which dirt and grit are particularly difficult to remove, it is a good idea to wash the leaves in the GEWA XL after pre-washing. This further developed washing machine for large processing capacities can wash up to 2,500 kg of lamb’s lettuce and up to 5,000 kg of iceberg lettuce per hour. It is fitted with the HELICAL wash system, which provides highly effective rotation in a spiral pattern in the wash tank.

Using the GEWA AF and GEWA XL in production lines guarantees the gentle, efficient processing of large amounts of leafy produce such as lamb’s lettuce with high hygiene standards and reduced water consumption.


September: Apples

Be it as an entire fruit or sliced, peeled or with its peel on, and as a snack between meals or an ingredient in meals, apples are one of the most popular fruits in many regions worldwide. Every year, millions of tons of apples are cultivated, imported and exported, and processed all over the world – mainly because they can be successfully stored all year round, and not just during the harvest season.

In comparison with many other fruits, apples are a relatively affordable product. When it comes to achieving cost-effective manufacturing of end products, processing activities with low staff requirements and the highest possible yield are essential. KRONEN offers a multitude of solutions for various stages of apple processing, from hygienization to peeling, decoring, and cutting into different shapes and right through to post-treatment and packaging.

With the DECONWA Prep, whole fruits are treated in a wash tank to prepare them for further processing. Various hygienizing additives can be used at this stage to decontaminate the product surface and thus avoid cross-contamination in the subsequent stages of peeling and cutting. The integrated overhead water shower and the optionally available air blower ensure that the entire product surface comes into contact with the washing water, even in the case of floating products such as apples.

With the various models in the AS line of apple peelers, apples are peeled, decored and, where desired, cut into slices, wedges, or bite-sized pieces with a perfect processing result. The top-cut knife enables any peel remnants that may remain on the top edge to be efficiently removed, thus significantly reducing subsequent manual work. Other machines suitable for cutting apples include the KUJ V cube, strip & slice cutting machineand the PGW pneumatical grid cutter.

To prevent the oxidation of the cut apples, the apple chunks or slices can be post-treated in the KDB dipping bath after the cutting procedure. Here, the cut produce is continuously fed through water containing additives in a wash tank, which only requires a very low fill capacity with a correspondingly low quantity of additives to achieve perfect results. The KDB 120 is therefore the ideal solution for particularly resource-friendly and in turn cost-effective post-treatment.

If needed, the cut apples can then, for example, be packaged as individual portions for safe transportation.


August: Chicory

This shade-loving vegetable is not only healthy but also much more versatile than people may think: chicory can be served as a salad, sautéed as a side dish, coated in cheese and baked in the oven, or enjoyed as individual leaves with a variety of fillings. It also offers plenty of healthy nutrients and is therefore now available all year round. Given that chicory is suitable for longer-term storage, chicory providers process the vegetable throughout the entire year. When processing chicory, a clean cutting result when removing the root, a fast, ergonomic, and safe processing procedure, and easy machine cleaning all play an important role. In line with these requirements, the CRC200 chicory root cutter was developed especially for the automated processing of chicory. The CRC200 is specifically adapted to the shape of chicory to ensure efficient and clean removal of the root so that the good product and root can be separated and discharged from the machine in the same step before the chicory is packaged.With a capacity of up to 80 pieces per minute, the CRC200 achieves efficient chicory processing with optimal cutting quality. What’s more, the cutting machine is designed to facilitate ergonomic and safe operation and can also be easily and thoroughly cleaned thanks to the hood cover providing access to its interior.

The solution can additionally be adapted and used for other products on request, such as carrots and zucchini. On top of all this, the chicory processing solution is also available with options such as a downstream outfeed belt and a cleaning table.

Be it in sandwiches or ready-to-eat mixed salads, tomatoes are an absolute must and an extremely popular ingredient worldwide for meals ranging from fast food to everyday dishes and right through to haute cuisine. Against this background, the processing of tomatoes also plays an important role in the fresh-cut sector, in which ensuring optimal processing hygiene and excellent cutting quality, even in the case of ripe fruit, are particularly important. When it comes to washing tomatoes before further processing and producing tomato slices or wedges, KRONEN offers a wide selection of machines.

To ensure the optimal hygiene and maximum shelf life of cut tomatoes, washing is also the first stage of the tomato processing procedure. With the DECONWA Prep or GEWA washing machines such as the GEWA 3800 B PLUS, tomatoes can be efficiently washed or hygienized using corresponding washing additives, for example CITROCIDE PLUS. In this process, the product surface is disinfected, and cross-contamination is prevented.

For the further processing of tomatoes, KRONEN offers grid cutting and cutting machines featuring top-quality knives that can cut the sensitive fruit cleanly and gently. The KRONEN grid cutting machines in the TONA range efficiently yet gently cut tomatoes into wedges and slices. The TONA S is particularly suitable for cutting tomato slices, which do not fall out of the machine when discharged. Like the HGW manual grid cutter, which is suitable for smaller capacities, and the PGW pneumatical grid cutters, the TONA machines produce tomato slices with a thickness of at least 5 mm. A wide variety of cutting inserts are available for cutting tomato wedges.

KRONEN additionally offers several different cutting machines suitable for processing tomatoes: the GS 10-2 belt cutter machine, the KUJ V cube, strip & slice cutting machine and the KSM 100 vegetable cutter can all cut tomatoes into slices or cubes of various sizes. When suitable tomato varieties are processed, the GS 10-2 can also produce particularly thin tomato slices.

The particularly sharp, thin blades used in the KRONEN cutting machines enable them to process even ripe, softer fruit to produce optically appealing products with no damage, perfect for improving end products such as ready-to-eat salads or sandwiches as a high-quality topping.

Baby leaf lettuce is a flavorsome and particularly delicate alternative to conventional salad leaves. It comes in many different varieties and is therefore ideal for freshening up a salad mix with leaves in various shapes and sizes. Unlike heads of lettuce, preparing baby leaf lettuce for processing involves less work because the leaves do not have to be separated first. That said, the sensitive leaves of baby leaf lettuce have a low bulk density and therefore place high demands on the processing procedure.

To achieve an end product with appealing aesthetics and the longest possible shelf life, it is essential that the mechanical stress placed on the leaves is as low as possible during processing steps such as washing and drying. To avoid damage to the leaves, the low bulk density and consequently high spatial requirements of the product need to be considered. KRONEN offers a variety of machines that are not only tailored to meet the special demands of sensitive products such as baby leaf lettuce but also designed to save as much space and converse as many resources as possible.

Baby leaf lettuce is often used as an ingredient in salad mixes, in which different varieties of baby leaf lettuce are combined and packaged as a ready-to-eat product. When it comes to achieving a constant mix ratio when producing salad mixes, a weighing system can be used to add consistent quantities of the various products to the washing machines while ensuring a constant product flow.

The GEWA AF pre-washing machine and the GEWA XL helical washing machine, which can be perfectly connected in a processing line, gently and efficiently wash large quantities of baby leaf lettuce. The specially developed submergence system puts the product in an optimal underwater position for an effective start to the washing process. Both washing machines complement each other perfectly and combine the flotation washing technique with the helical washing system to achieve optimal washing results and a high capacity. Given that KRONEN is constantly advancing its washing systems, both machines take up less space and require low water quantities.

The K650 or K850 drying systems can be used for the drying process depending on the capacity required. The optimally coordinated and automated procedure enables the lettuce leaves to be gently spin-dried. What’s more, the washing machines and drying systems can be optimally combined to form processing lines, thus ensuring a continuous processing procedure that produces consistently high-quality results.

Potatoes are cultivated in many countries worldwide and are one of the world’s most important foodstuffs. From raw produce to ready-to-eat convenience products, they are processed in a wide variety of ways and come in all shapes and sizes, especially in the areas of restaurants and hotels, fast food, and catering.

When it comes to processing potatoes, producers and retailers require solutions involving processing steps that are both reliable and efficient, namely with processes that are as automated as possible. KRONEN has been offering such comprehensive solutions in the form of processing lines and stand-alone machines for potato processing for many years and constantly develops these products. April: Mango

Due to their sweetness and aroma mangoes are an ideal ingredient in many foods and dishes whether in fruit salad, dried fruit, juice or in smoothies, ice cream, chutneys or as an ingredient in various dishes. This delicate fruit is in high demand and not only in the countries where the mango trees grow. Many mango producing countries export mangoes all over the world either as whole fresh fruit or as a ready produced product such as frozen cubes or dried slices.

Peeling and slicing mangoes, their high sugar content and the easy bruising especially of very ripe fruit pose a challenge when processing. KRONEN offers suitable solutions for different types of mango processing used by customers worldwide. Such solutions range from specialised machines and all-purpose machines to complete processing lines – of which only a few are mentioned here.

Using a wash cycle with hygienising additives in the Deconwa Prep the surface area of mangoes can be decontaminated before moving on to the next processing steps. In this way optimal hygiene is ensured at the start of the processing procedure and therefore the washing solution can be used for the transition from low care to high care production areas.

The Mango Peeling and Stoning Machine 20 developed by KRONEN partner ZTI Smart Machines means peeling and de-stoning is automated. During the peeling process the delicate fruit is held in place via the stone to prevent damage and simultaneously produces a visually appealing product.

The versatile GS 10-2 belt cutter can be used to further process the peeled, de-stoned mangoes. It cuts the fruit into slices or cubes. Using the specially designed cube grid to make either 15 x 15mm, 20 x 20mm or 25 x 25 mm cubes, wastage due to the fine pieces can be reduced.

In order to improve their shelf-life the processed mangoes can be treated in the KDB 120 dipping bath bath using various additives. The KDB 120 now operates with greatly reduced water quantities thereby saving resources and costs. Also, the product is de-watered upon discharge so as to prevent ice forming on the surface during further processing as e.g. a frozen product.

The above-mentioned solutions are complemented by a variety of additional KRONEN machines and can be integrated in processing lines. The Deconwa Prep, the GS 10-2 belt cutter or the KDB 120 immersion bath can also be used flexibly in processing a large variety of other fruits and vegetables.

Peppers are colourful, healthy and versatile. Their use ranges from fresh ingredients in fresh-cut products to convenience foods or sausage fillings and in a wide variety of frozen products. Many diverse demands are made on processing due to the extensive uses and the varying quality of peppers as raw material depending on the season and cultivation method (greenhouse or outdoors). As a solution KRONEN offers a comprehensive portfolio of machines which provides efficient processing with minimum labour, least possible amount of waste and top-quality processing.

The PDS4L pepper decoring and cutting system uses a semi-automated process which optimally positions the peppers in the product holders and then cores, halves and quarters them. Waste and usable product are separated. The yield is approximately 85% depending on the variety and quality of the pepper. Capacity is up to 750 kg per hour. Additional solutions specially developed for processing peppers are the GEWA 3850V PLUS and GEWA 5050V PLUS pepper washing machines. Their automated special separation feature means they are optimally suited for washing and sorting cut peppers. The peppers can be processed entirely without having to previously remove the core and stalk. A sophisticated system using various water flows ensures waste is separated from usable product thereby eliminating costly sorting procedures. The GEWAs achieve a yield of approximately 70% with a capacity of up to 800 or rather 3,500 kg of usable product per hour.

The GS 10-2 belt cutting machine and the GS 20 for larger capacities are designed to cut pepper halves into small (e.g. 35 x 35mm) squares and also into strips quickly, gently and with optimum cutting results, both for raw and grilled peppers.

With its DEW 200 dewatering press KRONEN also provides a further processing solution for cut pre-processed peppers which have been frozen and then defrosted for use e.g. as a filling in sausage or delicatessen products. The DEW 200 removes excess liquid from the defrosted peppers thereby avoiding long draining times.

In addition, several other KRONEN machines can be used for the processing of peppers depending on the production requirements - such as the KUJ V cutting machine for the production of cubes in different sizes or the PGW pneumatical grid cutting machine for the production of different shapes or figures.

For several years now, the popularity of avocados has been growing worldwide - as have demand and production volumes.

In addition to the famous guacamole, the specialty that originated in Mexico, avocados are now often used as a sandwich topping or ingredient in salads. And because you eat with your eyes first, the production of visually appealing product pieces is required for everything that is not processed as a dip. Despite optimal ripeness, this new requirement presented a challenge that could only be solved with manual processing. However, the constant strain caused by the necessary rotating hand movements when peeling the avocados often leads to health complaints among production workers.

Therefore, the only efficient way to meet the increasing demand is with machine-assisted or automatic processing:

With the Convenience Avocado line, KRONEN offers a semi-automated solution for peeling and pitting large quantities. The gentle processing produces halves from the delicate fruit that look as if they were peeled by hand. The products are thus optimally prepared for further processing, e.g. cutting into slices or cubes with the GS 10-2 belt cutting machine.

As part of a research project, KRONEN has also developed a new robotics-based solution for fully automated processing of avocados. The processing line is currently tested extensively. The line can be equipped with one, two or three robots and processes up to 1000 avocados per hour with 3 robots. The line enables optimal hygiene and reliable, continuous production. The quality of the visually appealing halved, peeled and, if desired, sliced avocados even surpasses that of manual processing.

Iceberg lettuce is among the top three lettuce products most frequently processed by KRONEN machines at our customers' sites worldwide. Its popularity remains high among private households, gastronomy and convenience manufacturing, even though competition from a variety of other lettuce types is growing.

As a crunchy component of mixed salads, iceberg lettuce continues to play an important role. The great advantage in processing iceberg lettuce is that it can also be cut particularly well into smaller pieces, e.g. squares or strips.

In particular, the KRONEN lines for processing salad with large capacities of 2 tons and more per hour are successfully used internationally for preparing, cutting, washing, drying, mixing and packing iceberg lettuce. These include, for example, the Mulitcorer and DCM series from our partner HiTec Foodsystems, machines for decoring iceberg lettuce in a continuous process. The prepared lettuce can then be cut into the desired shape with the GS 20 belt cutting machine and then passes through a washing machine, as for example the GEWA XL. For efficient spin-drying of large quantities of lettuce, the continuous KRONEN drying systems are used and then the ready-to-eat lettuce can be packed.

The KRONEN processing lines ensure efficient processing by optimally coordinated machines and are of course also suitable for processing more sensitive types of lettuce due to various setting options. Thus, with a wide range of individual machines and complete processing lines, KRONEN offers solutions for the most diverse requirements in the production of ready-to-eat (iceberg) lettuce.
