The innovative KRONEN CITROCIDE® PLUS hygienization system was developed especially to meet the demands involved in the industrial processing of fruit, vegetables, and salad leaves. The peracetic acid cleaning is ideal for the hygienic washing and disinfection of both whole products and cut products. It can be used to hygienize products such as leaf lettuce, carrots, bell peppers, apples, and other delicate fresh goods requiring maximum food safety with no residue whatsoever.

As a washing additive when washing fruit, vegetables, and salad leaves, peracetic acid is a disinfectant that reliably neutralizes microorganisms such as bacteria, fungi, yeasts, viruses, and spores (e.g. E. coli, Listeria monocytogenes and Salmonella) found on the products and in the wash water – even in the case of high organic contamination of the process water. It therefore provides disinfection compliant with HACCP (hazard analysis and critical control points)&nbspstandards.

Due to the particularly gentle effect of the KRONEN CITROCIDE® PLUS solution, the quality and freshness of the product are also maintained in full.

The system is an alternative to chlorine in sustainable food disinfection. When CITROCIDE® PLUS is used, no hazardous by-products, such as chlorinated disinfection by-products, are produced. This means that after disinfection, the process water contains no hazardous DBPs (disinfection by-products) that may be harmful to human health or the environment whatsoever.

In its scientific statement, the European Food Safety Authority (EFSA) underlined that the disinfection of the process water is not an optional step but a significant hygiene measure. The use of the washing additive CITROCIDE® PLUS ensures optimal hygiene in fruit, vegetable, and salad leaf processing. Peracetic acid disinfection cleans the wash water, reliably prevents cross-contamination between different product batches or within the processing line, and enables safe, hygienic water recycling, even in the case of high organic contamination due to product residue. 

As a result, the water does not need to be replaced as often, and water consumption can be significantly reduced – in contrast to chlorinated processes in which organic deposits cause the disinfection performance to rapidly deteriorate. The results with the chlorine-free disinfection solution:

Flexible and efficient integration into KRONEN washing machines

CITROCIDE® PLUS can be flexibly combined with various KRONEN washing machines, for example with the HEWA and GEWA washing systems. It is integrated using an automated dosing system and a special recirculation unit that optimally distributes the peracetic acid solution in the wash water.

The application is precisely controlled and documented for maximum process reliability and traceability.


Highly effective use of peracetic acid for maximum food safety: also in comparison with chlorine-based disinfection

With the CITROCIDE® fresh-cut system, KRONEN GmbH and Productos Citrosol S.A. offer an innovative solution for the hygienic washing of fruit, vegetables, and salad leaves. 
The effectiveness of the system has undergone comprehensive testing in an industrial environment and been proven on a multitude of products in laboratory tests conducted bySpain’s National Center for Food Technology and Safety (CNTA).

Specialist article on the effectiveness of peracetic acid cleaning

This study shows that peracetic acid (PAA) is an effective and sustainable alternative to chlorine for the hygienic cleaning of fresh-cut products. A dose of 35 ppm PPA reliably deactivates E.coli, even when there is a high chemical oxygen demand (COD) in the wash water. In the study, the effectiveness of peracetic acid disinfection was comparable to that of chlorine. Unlike chlorine, however, the use of PAA led to no significant amounts of chlorinated disinfection by-products (DBP) in the process water, while the chlorine hygienization resulted in a high concentration of hazardous by-products

This study compared the effectiveness of peracetic acid (PAA) disinfection and chlorine disinfection in the wash water of fresh-cut vegetables. The results show that peracetic acid, especially CITROCIDE® PLUS, is an effective alternative to chlorinated disinfectants for the fresh-cut industry. The use of PAA also results in a much lower amount of hazardous by-products in the wash water. The effectiveness of the solution is additionally maintained in the case of high organic contamination, thus guaranteeing food safety.

A comparison between peracetic acid and chlorine in industrial disinfection
