The GS 10-2 belt cutting machine achieves excellent results when cutting yuca

With the KRONEN GS 10-2 belt cutting machine, yuca (also maniok or cassava) can be processed precisely and gently. The cut maniok roots are then used to produce snacks similar to traditional potato chips.

Yuca, also known as manioc, originates from Brazil and is now an important staple food in many tropical regions worldwide. Its root has a mild, slightly nutty flavor and is processed like potatoes, for example to make chips, fries or tapioca. Yuca root does, however, always have to be processed or cooked before being suitable for consumption. 

This ‘superfood’ is becoming an increasingly popular ingredient among snack producers. Manioc root is gluten-free and contains nutrients such as potassium, fibers, and antioxidants.  

Cutting yuca chips efficiently and evenly 

Yuca has a mild, slightly nutty flavor. Given that raw manioc root contains natural hydrocyanic acid compounds, it must, however, be processed or heated before being suitable for consumption. 

The GS 10-2 belt cutting machine is ideal for processing yuca precisely and with high-performance results. As the video shows, the peeled manioc root is cut into 1-mm-thick slices using a knife with straight blades. Given the high starch content and firm consistency of yuca, a precise and product-friendly cutting technique is essential to ensure even further processing. 

A suitable product temperature also plays an important role in achieving optimal results. In this example, the manioc root is processed at around 5 °C. At this temperature, the GS 10-2 achieves a very even cutting quality with only around 0.2 % waste and a capacity of approximately 345 kg per hour. With a five-blade cutting disk, its performance for this application can even be increased to up to 850 kg per hour. 

High flexibility for various applications 

The GS 10-2 is suitable for a multitude of applications in fruit, vegetable, salad leaf, and fresh-cut processing. Different knives and cutting tools enable product-friendly processing of a huge variety of products – from herbs and leafy greens right through to firmer vegetables such as potatoes, carrots, cabbage, and manioc. Depending on the product and application, the cutting machine can process capacities of up to 1,500 kg per hour.
