Peppers are colourful, healthy and versatile. Their use ranges from fresh ingredients in fresh-cut products to convenience foods or sausage fillings and in a wide variety of frozen products. Many diverse demands are made on processing due to the extensive uses and the varying quality of peppers as raw material depending on the season and cultivation method (greenhouse or outdoors).

Two Food Start-ups use KRONEN machines to process vegetables in the production of Kimchi and other vegetable products:

Time saving and easily prepared products (also vegetarian and vegan) for a healthy diet are currently in huge demand. Kimchi which is fermented seasoned vegetables, thus preserved, contains nutritious ingredients and adds flavour to a variety of dishes. Two German Start-up companies are serving the market with Kimchi and other vegetable products and beverages and since 2021 have increased production capacity due to the installation of KRONEN machines.

For several years now, the popularity of avocados has been growing worldwide - as have demand and production volumes.

In addition to the famous guacamole, the specialty that originated in Mexico, avocados are now often used as a sandwich topping or ingredient in salads. And because you eat with your eyes first, the production of visually appealing product pieces is required for everything that is not processed as a dip.

Customising and adapting machines to a customer´s special processing requirements is one of KRONEN's key competencies.

Iceberg lettuce is among the top three lettuce products most frequently processed by KRONEN machines at our customers' sites worldwide. Its popularity remains high among private households, gastronomy and convenience manufacturing, even though competition from a variety of other lettuce types is growing.

As a crunchy component of mixed salads, iceberg lettuce continues to play an important role. The great advantage in processing iceberg lettuce is that it can also be cut particularly well into smaller pieces, e.g. squares or strips.

Meeting of the partners from the SPLASH research project in Kehl:

As part of the project, KRONEN is working with scientific partners, those from the industry and in practice to develop an innovative washing process for fresh cut lettuce. At this project meeting at KRONEN, a washing machine specially adapted for this decontamination process was now tested.
