Junio 2020 - KRONEN calendario receta: Fruta del dragón marinada con salmón y chutney de mango

Ingredientes para 10 personas

  • 5 frutas del dragón
  • 1 kg de lomo de salmón
  • 0,1 l de zumo de fruta de la pasión
  • Especias
  • 4 mangos maduros
  • 1 chalota
  • 30 g de jengibre
  • 4 dientes de ajo
  • 250 g de azúcar moreno
  • 1 naranja
  • 1 lima
  • 200 ml de vinagre de manzana
  • 1 pimiento rojo
  • 1 palo de canela
  • 1 cuchara de granos de mostaza
  • 100 g de uvas pasas

Preparación

  • lavar, descorazonar y picar el pimiento rojo
  • pelar y picar el ajo y el jengibre
  • pelar y cortar en pequeños cubos las chalotas
  • cortar a la mitad, pelar y cortar en cubos los mangos
  • cortar a la mitad la naranja y la lima, exprimir el zumo
  • mezclar los ingredienes preparados en una olla grande, hervir a fuego lento durante 2 horas como mínimo y remover la masa aprox. cada 15 minutos, después dejar reposar para que se enfríe
  • pelar y cortar en rebanadas las frutas del dragón
  • marinar la fruta del dragón con el zumo de fruta de la pasión y el chutney de mango
  • condimentar, asar y dejar reposar el lomo de salmón
  • adornar y servir

Con la máquina peladora de mango FP20, los mangos se pelan en segundos.

  • 0,5 kg de arroz
  • 0,3 kg de quinoa multicolor
  • caldo vegetal
  • 2 kg de diferentes verduras
  • 0,2 kg de bayas mixtas
  • especias

Preparación

  • preparar, estampar y escaldar las verduras
  • cocinar el arroz/la quinoa en caldo vegetal, condimentar
  • llenar el bol, adornar con verduras estampadas y bayas

Las diversas figuras de perforación se pueden producir con la variedad de plantillas de perforación en la PGW cortadora neumática.

Ingredientes para 10 personas

  • 1 kg de yaca (pelada)
  • 0,5 l de nata agria
  • 0,25 l de salsa Barbacoa
  • 10 tortillas para wraps
  • 1 col china
  • 0,3 kg de Baby Leaf
  • especias

Preparación

  • preparar la yaca, desmenuzar/cortar, asar (a la parrilla) y marinar con salsa Barbacoa
  • condimentar la nata agria
  • cortar, asar y condimentar el col china
  • lavar el baby leaf
  • untar los wraps con nata agria, colocar el baby leaf, el col china, la yaca, despuès enrollar los wraps
  • cortar, adornar y servir

La producción de yaca desmenuzada es posible con la cortadora con banda GS 10-2 con cuchillo de corte .


MARZO 2020 - KRONEN calendario receta: Mousse dulce de aguacates con naranjas confitadas y trocitos de manzanas

Ingredientes para 10 personas

  • 7 aguacates
  • 0,4 l de nata
  • vainilla, azúcar
  • 7 láminas de gelatina
  • 0,05 kg de naranjas
  • 0,05 kg de manzanas
  • 0,15 kg de bayas mixtas

Preparación

  • pelar y descorazonar los aguacates
  • cortar en cubos los aguacates y triturar en la batidora
  • condimentar el puré con azúcar y vainilla
  • remojar y disolver la gelatina, mezclar con cuidado con la masa de aguacates
  • montar la nata, mezclar con cuidado con la masa y verter en moldes
  • pelar las naranjas y manzanas
  • cortar en tiras finas la cáscara de naranja y cortar en trocitos las manzanas
  • caramelizar las finas de naranja y secar los trocitos de manzana
  • adornar el mousse con las naranjas confitadas, los trocitos de manzana y las bayas

Procesamiento de aguacates con la Línea de Aguacates o Paltas.


FEBRERO 2020 - KRONEN calendario receta: Lasaña de calabaza y verduras

Ingredientes para 10 personas

  • 3 kg de calabaza butternut
  • tomillo
  • 5 chalotas
  • 0,25 kg de mantequilla
  • harina
  • leche
  • caldo vegetal
  • 2 chiles
  • 0,25 kg de mozzarella rallada
  • 0,1 kg de queso parmesano
  • 0,15 kg de pepitas de calabaza
  • ½ pan tostado
  • especias

Preparación

  • Pelar, cortar a la mitad y despuésen rebanadas finas la calabaza butternut
  • Rehogar en mantequilla laschalotas y el tomillo. Añadir harina, verter leche y caldo vegetal, removertodo y hervir a fuego lento durante 3 minutos, condimentar
  • Colocar con salsa las rebanadasde la calabaza y los aros de chalota en un molde para hornear, espolvorear conmozzarella y queso parmesano, cocinar en el horno -a 180°C, con ventilación-durante aprox. 45 minutos
  • Adornar con croûtons y pepitasde calabaza

La calabaza está perfectamente pelada con la peladora de piñas, melones y sandías AMS 220.

Ingredientes para 10 personas

  • 1,5 kg de palmitos
  • 2 chalotas
  • 1 chile
  • 10 gambas
  • ajo
  • 1 manojo de perejil
  • 1 manojo de eneldo
  • 1 manojo de cebollino
  • 1 limón
  • aceite
  • especias

Preparación

  • cortar en pequeños trozos el perejil, el eneldo, el cebollino y la cáscara de limón, mezclar con aceite y sal
  • cortar los palmitos en anchas espirales y escaldarlos
  • asar brevemente las gambas, chalotas, los chiles y el ajo
  • en una sartén, saltear los palmitos con gremolata; servir en platos y adornar con una gamba

Preparación del linguini con la máquina cortadora de vegetales SPIRELLO 150.

A spring-loaded knife adjusts automatically to provide a consistent result on uneven surfaces. The peeling thickness can be adjusted. It is simple to operate. „Fresh from the field to the table“ – this is the motto for this year‘s KRONEN Calender 2017 – inspiraled by our machine highlight, the Spirello 150.
With this machine large quantities of vegetables can be optimally processed into vegetable spaghetti.

Experience the product versatility of our KRONEN machines for yourself and find an inspiraling machine for your requirements. We show you how quickly and easily you can process seasonal vegetables, salad delicacies and fruit delicacies directly from the harvest.

Suitably for these photographs we introduce the respective processing possibility for preparing, cutting, washing, drying, peeling, coring and packaging.

The corresponding recipe for 10 persons is provided as well. Through effective combining we implement complete production flows and rational processing lines with process automation through the use of state-of-the-art control and regulating technology.

We set trends in the processing of vegetables, salad and fruit, but also vegetarian and vegan meat replacement products have been processed for this year‘s recipes.
Our chefs, Wolfang Blum and Andreas Eigner have enhanced this year‘s edition with many creative ideas and delicious recipes.

As a small pre-taste, we are already presenting the dessert from the calendar page December 2017 :

Caramelised apples
on apple buttermilk pancakes
on flambéed apple slices with vanilla foam


Ingredients for 10 persons:
1 packet brown sugar, 2 bottles apple cider, 200 g marzipan, 200 g raisins, 200 ml Calvados, 1 l milk, 6 eggs, 2 cups cream, 100 g butter, 500 g flour, 500 ml butter milk, salt, 16 apples, 2 limes, 1 bunch mint, 1 vanilla pod, 1 package clarified butter

  • Preparation "Caramelised apples":
    Peel apples and remove the core. Fill 10 apples with marzipan and raisons. Sauté in a pan with apple cider. Then thickly sprinkle with brown sugar and caramelise.

  • Preparation "Apple buttermilk pancakes"
    Cut 3 apples in slices. Heat butter in a pan, stir together with flour, sugar, buttermilk, egg and a pinch of salt. Fry pancakes, portion by portion with apple slices in clarified butter.

  • Preparation "Flambéed apple slices with vanilla foam"
    Segment 3 apples and deglaze with Calvados and flambé.
    Mix egg, cream, sugar, with vanilla pump. Beat until foamy over a water bath.
