Product of the month January: Iceberg Lettuce

Iceberg lettuce is among the top three lettuce products most frequently processed by KRONEN machines at our customers' sites worldwide. Its popularity remains high among private households, gastronomy and convenience manufacturing, even though competition from a variety of other lettuce types is growing.

 

As a crunchy component of mixed salads, iceberg lettuce continues to play an important role. The great advantage in processing iceberg lettuce is that it can also be cut particularly well into smaller pieces, e.g. squares or strips.

Press article: New washing process for fresh-cut lettuce being studied

"Since 2019, Gartenfrisch Jung GmbH, Kronen and the Leibniz Institute have been working on a new process to wash fresh-cut lettuce. During a project meeting at Kronen’s head office, a washing machine specially adapted for this decontamination process was tested. The next step is an extensive testing phase actually in a Gartenfrisch Jung production line. The initial point of the research project is to prevent the risk of microorganisms from contaminating packed cut lettuce. Commonly, cell sap released from fresh-cut lettuce combined with humidity — unavoidable in plastic packaging — provides a breeding ground for microorganisms."

Successful testing of new disinfection technology

Meeting of the partners from the SPLASH research project in Kehl:

As part of the project, KRONEN is working with scientific partners, those from the industry and in practice to develop an innovative washing process for fresh cut lettuce. At this project meeting at KRONEN, a washing machine specially adapted for this decontamination process was now tested.

"A British coleslaw and ready meal manufacturer has recently installed Kronen´s UVC Lock lines in its food processing production to ensure the vegetables are in a hygienic condition before the next processing steps e.g. peeling carrots or cutting cabbage and onions*. This results in the surface of up to 3000 kg of vegetable being efficiently disinfected without heat exposure and without leaving residue on the product."
